The menu key is the key with the Blackberry symbol on it (the weird shaped B). To change ringtones/text message ringers you need to go to profiles and select "set contact alerts."

I'm not sure about that...I'd try searching google for a windows mobile app that keeps track of that stuff, I'm sure there are probably plenty that will do what you need.
