Help me understand the frequencies and unlocking phones

Ok, I've just started looking into this. This phone looks like exactly what I'm looking for. I'd like to go with T-mobile for my carrier. If the phone supports 850, 900, 1800 and 1900, why couldn't I get a sim card from t-mobile and drop it in an unlocked 6260? Or any 1900 GSM unlocked phone?
