Voice Dialing? Speed dialing?

Can someone please tell me how to dial a number by saying the name I've recorded? I can't figure out how to tell the phone I want to voice dial.

Same for speed dialing. It automatically gives your contacts a speed dialing number, but I can't figure out how to tell it I want to dial speed # 10. Help!
