Have you changed the SIM card yet? Have you tried using that SIM in other phones? It's not unknown for the SIM to be the cause of such problems.
The freezing & restarting issue shouldn't be tied to the SIM issue at all (the phone can operate offline); what programs are you running? What happens when it freezes? When I try to do too much with mine (run OperaMini, Music player, and image viewer at the same time, for example), it will glitch & freeze.
