With the USB cable, you should be able to use BitPim (http://bitpim.sourceforge.net/) to access the phone's filesystem directly, and download the pictures. Once you have them on a computer, it's just a matter of stripping a 124-byte header from the beginning of each picture file to create a standard JPEG.
Videos are a bit harder to recreate, but doable.
