I'm interested in getting this phone, but I want to use it for music. How hard is it to sync with iTunes, and are there any issues with doing so?

I don't know about syncing some people use an app called double twist. I just drag and drop music I've purchased from itunes and I have no issues. I have had the fascinate since launch day and its great.

You Can't plug your phone in and get Itunes to see it. This isn't a phone problem, this is Apple blocking anything that competes with their platform.
Doubletwist works great if you do a lot of playlists.
If you're like me and just have a ton of albums, Drag and Drop (like a flashdrive) works with no special programming needed.
