Text messaging mode

I have a replacement for a defective phone that I received from Verizon. I can't remember how to make the iTAPEng the default mode for entering text. I know that's how it was set on my old phone, but I can't seem to set it that way on the replacement. Is it possible? If so, how do I do it?
