The profiles section, where you can select Normal, Loud, Vibrate, Quiet, etc. is the right place for customizing different sounds based on available events on your device. Scroll all the way to the bottom until you find Advanced. From the next screen choose the profile you wish to modify. Things become pretty self explanatory from there on out. Take note that each event has an "Out of Holster" and "In Holster" setting. Don't forget to save changes you make. This is also the place where you can set the default ringer volume.

Also, you can set up custom rings based on who is calling. From your address book, edit an entry and while in edit mode press the menu key and select "Add Custom Ringtone". This way you can tell if it's your spouse calling or your mother-in-law without even looking.
