How do I stop my N75 from automatically retrieving email. Can I get my mail manually and not automatically. Thanks.

You should be able to go into your email settings and turn off the automatic retrieval.
Menu>Messaging>Options>Settings>E-mail>Mailbo xes>(your e-mail account)>Automatic Retrieval>Make sure both "Receive and auto-update" and "Header retrieval" are disabled.

The confusing part is that I do not have any mailboxes defined, so why does it still retreive email automatically?

Are the emails coming into your email box or into your messaging inbox? If they're hitting your messaging inbox then it sounds like they're being forwarded as SMS's. In this case, there's something turned on in your email account that's forwarding your email to your phone and you'd have to go through your email provider for that.
