I don't think it can be done because Pocket PC OS is NOT windows and I don't think theres a version of Linux that will run on that device. The OS for the i700 and similar phones is hard-wired in and can't be easily replaced. It CAN be upgraded but not replaced.
Sorry to say it, but not likely to happen. And BTW if you SHOULD get it working you will void your warranty, just FYI.
