In ME you get to make your own character, male or female, and choose your dialogue options. You also get a large crew to interact with and can even romance certain members of said crew. Some of them are aliens, so you can do your best Captain Kirk impersonation and bang a blue alien babe. However, it's a very plot driven series and a large part of the appeal is starting with the first game, then importing your character into ME2 then ME3, because it carries over all your decisions/romances/other stuff, which influences the plot in a pretty big way. If you just jump straight into ME3 it's not nearly as satisfying.
DS3 is much more linear. It's basically Resident Evil 4...in SPAAAACE! It's quite scary and while it does have a pretty good plot, it's not nearly as integral as it is with Mass Effect. The gameplay is incredibly visceral and satisfying, as you have to chop off the limbs of the enemies to kill them, rather than going for headshots. It's also got a cool weapon crafting feature. Tons of creepy environments. The first half of the game takes place on and around a fleet of derelict 200 year old ships, and there are several segments where you have to spacewalk between ships, and you're alone out in the void. It's cool. And there's a nifty little "Last time on Dead Space..." video at the beginning to catch you up on the plot of the first two.
If you're looking to get one free from the Sims thing, go with DS3. Mass Effect 3 should be experienced as part of the entire trilogy for the full...effect.
