Keep in mind that Ezio is implied to be not entirely human.
Since he's a genetic descendant of Adam and Eve, he's part human, part Ones Who Came Before, which is why he can fall so far and shrug off wounds that would kill a normal person. It also accounts for his Eagle Vision and climbing/jumping abilities.
Altair and Connor share the same bloodline, as does Desmond.
