I understand you care for your ex's feelings, and he's probably a nice guy overall that just didn't work out as a boyfriend.
However, this is something that needs to be breached. Sit him down, or call him on the phone if there are no other distractions, and tell him that you won't be able to hang out as much because you're seeing someone else.
It will probably hurt him, and there's no way around that. He might even ask for some time without talking, in which case you should give it to him. But if he's "friend material", eventually he'll settle his feelings and be able to continue your friendship.
Think about this: if the roles were reversed, how would you like him to handle the situation that he can't hang out with you as often due to him dating someone else now?
