I was also trained on a la mazzoraco. That was our first machine. It was used and we all decided it was garbage. So my only experience with those machines is a bad one. My brother decided on the conti because at the time it was one of the only twin boiler machines on the market and was considered to be one of the best. We had two of them. Tamping is definitely important and the grind is important too. All of the starbucks here are varissimos with automatic grinders. I'm sure you could use a conti, but I'm not at all confident in teenagers and early 20 somethings going from pressing two buttons to having to do everything else. We used panache coffee by the way, ever tried it?
