i have nokia 5300 and i have unlimited texting plan i was wondering if i signed on aim and chatted would it cost extra?

It should not be counted as a data charge so you should not be charged extra. I used to do it all the time with my Samsung T629 and, they classify it as an IM but it is included under the messaging bundles.

phones capable of IM, it is counted as a text.

You do not need internet.
