I'm new to GSM networks and I was wondering if you have a t-mobile, would it operate off of a at&t wireless GSM tower or just t-mobile towers?

That would depend on if T-Mobile has a roaming agreement with ATTWS in your area. If they do, it will use ATTWS towers when a T-Mobile tower is not available. Your local sales rep should be able to tell you if they roam on ATTWS in your area.
