Many apps update in the background and use data while you may be on a call. None of these will update until the call is terminated. While this lack of app functionality may not be a killer for most people, anyone used to receiving or sending email while they're on a call will certainly miss that function, if nothing else.
My main point was that this is a limitation of CDMA technology. Not the phone being crippled.
As for the app updates (unless you meant things like status updates or weather updates). I highly advise against auto-updates...

Well actually, it's not just the iPhone on Verizon's network, it's any smartphone on Verizon's network.
The problem stems from the fact that Verizon's widespread CDMA network only supports a single session of either voice or data, but not both. This is an issue with any CDMA smartphone, not just the new iPhone.

I can see your point that it could be inconvenient. There are trade offs with all carriers. I guess this is just one that Verizon has for the time being. I'm sure LTE will come with it's share of trade offs.
