2.1 is largely a cosmetic update. You have yet to give 1 reason why it is a critical update.

-Multitouch browser, Dolphin and xscope do this, better than the native browser at multitouch imo.

-Google Earth. Capable of running on 2.01, market for some reason blocking it. You can side load it without rooting easily.

-2.1 Keyboard. Ported, does not require rooting (though it works best with it)

-News and Weather Widget: Ported, no rooting required.

-Gallery. Ported, no rooting required

So that leaves... what? Live wallpapers? the new launcher (which most likely won't make it to the droid because it cannot handle a physical keyboard well (yet))
