Cake. ...at least once you know you can't set it up from within the Mail application. It's in the totally separate Settings part, just like every other setting you should only need to access rarely after initial steup.

...do you find it to be a big problem swapping between phones? I know one cannot put a normal AT&T sim in the iPhone, but can one put an "iSim" in a non-iPhone?

You can put an iPhone SIM in another phone (AT&T or unlocked).

And actually, you can put a "regular" AT&T SIM in an iPhone. It doesn't reject it, but rather prompts you to sync with iTunes to "re-activate" the phone with the new SIM card.
