I remember someone who used 12 MB in Canada on accident when on a short trip who came back to a $200+ roaming pay-per-use charge.

Either way, you get shafted. I think the best option is to turn off cellular data altogether and only use wi-fi.

Depends. Even if the wi-fi connection is open, that doesn't mean that individual apps aren't sending encrypted data.
Look at it this way. If you send a clear text login over the Internet, it isn't just vulnerable between you and the AP; it can be intercepted anywhere along the route from you to the server. Multiple hops and routers will be involved, and any of them could be compromised.
I'm not saying not to be wary of open AP's. Definitely do pay attention, but pay closer attention to the apps you use. It's becoming more common for them to use something like SSL to encrypt data, and that will give you an extra level of protection, even on an open AP.

That's always a valid option. Or if you just want data (and no talk/text)... then pick up prepaid service. For talk and text, I can understand wanting to keep your same phone number. For data-only, there's no point.
